After being closed for 5 years, drive-in restaurant reopens in St. Louis Park

The Galaxy Drive-In in St. Louis Park reopened Monday as Clay’s Galaxy Drive-In.

The restaurant has been closed since 2015. The owner, Steve Schussler, had been waiting for the right moment to bring it back.

The midst of a pandemic doesn’t seem like the perfect time to open a restaurant with so many closing, but drive-thru eateries have been proving to be very popular in the last few months, especially before restaurants reopened to customers Food.

Schussler, who founded the Rainforest Cafe, still owns the company, but has hired Mark Saliterman, a real estate developer who owns Clay’s Restaurant in Rockford, and Clay’s chef, James Awe, to build the redesigned drive-in at 3712 Quebec Ave. S in St. Louis Park, said the Star Tribune.

The restaurant is open 11am to 8pm daily and features an updated menu from the last time the drive-in served customers, including homemade products as noted on the drive-in’s website.

The menu features nine different burgers, eight different types of hot dogs, starters like cheese curd and boneless wings. There are also sandwiches, fish and chips, shakes, poses, fries and onion rings.
